This dish is served at Fortunes Restaurant, located trackside at Saratoga Gaming and Raceway....Chicken stuffed with Prosciutto and Boursin
10oz Boneless, Skin on Chicken Breast
.5oz Prosciutto – Sliced thin and cut julienne style
.5oz Roasted Red Pepper – Diced into small pieces
1oz Boursin cheese
2oz Sherry
1 Tablespoon Shallots
2oz Heavy cream
Salt and Pepper
Seasoned Flour
Procedure:
Preheat oven to 400°. Mix together prosciutto, red pepper, Boursin cheese and season with salt and pepper. Make a slit in the side of the chicken and fill with mixture. Dredge chicken through seasoned flour. Add oil to a hot sauté pan. Sear dredged chicken on both sides. Place chicken on sizzle platter and finish in oven. In same hot sauté pan pour off excess oil add shallots. Deglaze shallots with sherry, add cream and season with salt and pepper. Set aside.

What’s has your bureau sales team been up to, you ask? Here’s what!
Your bureau sales staff and hotel partners traveled to New Brunswick, New Jersey last week to represent Saratoga at the Meet USA East Coast. Meet USA is produced by EMC venues, and is held in four locations across the country each year. This year’s conference marked the sixth year the show has come to the New Jersey/New York market, an area rich in both corporate and northeast association business. The two day conference was attended by about 150 meeting planners, and the organizers excelled at offering multiple points of contact for planners and suppliers, providing numerous and creative networking and ice breaking opportunities. The bureau took our exposure to the next level by becoming a gold sponsor, which afforded us additional opportunities to get in front of the audience with our Saratoga message. Marie Moynihan made a presentation at the opening general session which was very well received – she received several compliments throughout the remainder of the show -, we had larger, preferred exhibit space on the trade show floor, as well as continuous advertising and promotion at the lunch program, in all publications, in the break areas and on the continuous scrolling LCD screens. Over all, we feel the show was a great success in introducing Saratoga to a new audience as well as re-familiarizing and updating those who know and have used us in the past. We will now begin our efforts to follow up with the contacts we made and look to bring new business to Saratoga. A special thanks goes out to Mary Jo Janis of the Gideon Putnam Resort and Jamie Lanning of Longfellow’s for making the trip with us and representing our fabulous destination!
The Convention Bureau and Hilton promote Saratoga for 2010 Conference
On Sunday and Monday, October 25 & 26, 2009, Kathy Denkenberger, Convention Services Director and Cindy Sullivan, Sales Manager of the Saratoga Hilton were in Lake Placid promoting Saratoga to the NYS Geographic Information Systems Conference. This conference is being held in Saratoga in October 2010. Delegates attending this conference were very excited to be coming to Saratoga in 2010.

CMI Communications announced the opening of their new offices at 10 Walker Lane, Albany NY 12205, in the Clark Office Park in Latham. The newly-updated facility offers increased storage space for equipment, and modern offices for CMI's growing Albany staff.
One of CMI’s longtime clients, Ms. Bevin Tracy, Director of Service Operations at the New York State Nurses Association said, “NYSNA has utilized CMI for the last 20 years (possibly more) to handle the needs of our annual convention. They have been able to meet our needs time and time again for this complex 5-day event as well as several other events". CMI has several other longtime clients in the area such and NYS Health Facilities Association, NYS School Boards Association, NYS Parent Teachers Association, Healthcare Association of NYS, New York Council on Social Studies, State Farm Insurance, General Electric, and NYS Computers and Technology Education, to name a few.

National Museum of Dance Winter Hours
The National Museum of Dance, located at 99 South Broadway in Saratoga Springs NY, will be open Friday, Saturday and Sunday starting November 3, 2009 to May 16, 2010 with the exception of December 22, 2009 to February 2, 2010 when we will be closed for winter break. The museum will be open for dance events, lectures, group tours and facility rentals and functions.

Saratoga Strike Zone is Expanding
Saratoga Strike Zone is transforming from a bowling center to a family fun center with a variety of attractions for people of all ages!
