Restaurant Recipe Corner
Turkey Pot Pie - Chef Dale Miller, Executive Chef at Sperry’s
1 recipe for a double crust pie
(or store bought double pie crust)
4 tablespoons butter , divided
1 small onion, diced
1 stalk celery, chopped
1 cup cooked corn
1 cup cooked peas
3 tablespoons Italian seasoning
Salt and pepper to taste
2 cubes chicken bouillon
2 cups water
2 cups cooked turkey, cubed
3 tablespoons all-purpose flour
½ cup milk
1. Preheat oven to 425 degrees F
2. Press bottom pie crust into a 10-inch pie pan and set aside.
3. Melt 2 tablespoons of butter in a large skillet over medium heat; add the onion, celery, corn, peas, Italian seasoning, salt and pepper. Cook and stir until the vegetables are warmed through. Stir in the bouillon and water. Bring mixture to a boil.
4. In a medium saucepan, melt the remaining 2 tablespoons of butter. Stir in the turkey and flour. Add the milk and heat through.
5. Stir the turkey mixture into the vegetable mixture. Cook until thickened.
6. Pour the mixture into the unbaked pie shell. Add top crust to top of filling. Flute edges and make slits in the top crust.
7. Bake in a preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F and continue baking for 30 minutes or until crust is golden brown.

2012 has gotten off to a great start and is already showing promise of another successful year here in Saratoga. Mary Jo will be off to Reno, Nevada for the Helms Briscoe Partner fair from January 25-27, 2012. The purpose of our attendance in this show is to reach out to Helms Briscoe (An international meeting planning company) Associates who have or could potentially do business in the Northeast, New York State, or specifically the Capital Region and Saratoga. We have also put together a national incentive program for their company encouraging them to provide us with credible RFP’s for Saratoga to pursue. This show is a way to get Saratoga on the map with hundreds of associates who plan events across the country every day for associations and corporations. Heather recently attended NTA and ABA – both Group Tour and Travel shows that attract industry operators from all over North America. Heather held appointments with over 60 operators, and met with many more during networking sessions and volunteering throughout the show. Saratoga is having great success in attracting new companies to our area, and encourage existing companies to come more often and stay longer. We will keep the momentum going with a group tour FAM in late April and will continue to bring all of county wide partners opportunities to work with this lucrative market.
The Bureau recently organized a group outing with a number of our hotel partners to participate in a tour of Sematech and the College of Nanoscale Science and Engineering in Albany. The purpose of the tour was for all of us to learn more about nanotechnology as we continue to attract more high tech companies to our area. This complex has attracted over 300 global corporate partners and is the most advanced research complex of its kind at any university in the world. The worlds most advanced nanoscale research is happening here, right in our own backyard. For any of our members who are interested in taking a tour of this facility, you may contact the college directly. It was a very interesting and informative tour.
February and beyond will find us focusing on several pending groups, such as a conducting a final site tour with the National Holstein Association which represents over 1600 room nights for 2016. NYS Veterinary Medical Society for December 2012, Hospice and Palliative Care Association for November 2012, and the New York Council of Health-System Pharmacists for May 2014 and 2016, the 2012 Hero Rush Obstacle Race, and 2012 Killer B Teen Masters are just a few groups we are moving towards finalizing details with and hopefully moving into the contract stage with them. 2012 will also find us working more closely with our local and regional sports tournaments, with our goal to help support the tournaments so that they can grow in size and length and to help them keep as much tournament related business in Saratoga County.

Convention Services
The 2012 Flurry Festival will be held
February 17-19, 2012 in Saratoga Springs.
Each year, the annual three-day Flurry Festival brings thousands of people to the Saratoga Springs area. They stay in area lodging, dine at area restaurants, shop at local stores and visit area attractions.
The NYS Council of Health-System Pharmacists will be holding a Blood Drive on Saturday, May 5, 2012 from 8- 11 AM at the Saratoga Hilton.
Convention Services Update
January brought some terrific convention groups to Saratoga. The NYS Professional Land Surveyors Assn. met in early January. “What a pleasure it was to hold the NYSAPLS 53rd Annual Surveyor’s Conference & Exhibition at the Saratoga Hilton and Saratoga Springs City Center! Our members had a wonderful time strolling the beautiful downtown area visiting local shops and restaurants during their visit. We couldn’t have been more pleased with such a helpful Convention Bureau, host hotel, and conference facility. We are truly looking forward to another successful conference in Saratoga Springs next January 2013!" – Amber Anderson, Interim Exec. Director, NYS Professional Land Surveyors
The Northeast Organic Farming Assn met in mid January. Their attendance was over 200 more than they had in the past. According to Matt Robinson, planner for this assn. this increase was due to a symposium they were able to add to their program – which was funded by grant monies. This was awesome for Saratoga – more people on the streets and in our restaurants, retail shops and attractions.
I had the privilege of attending the Event Service Professionals Association's (ESPA,formerly ACOM), annual conference this past month. It always amazes me when I meet with colleagues/cities from around the United States at how similar our challenges and successes are. Some of our key topics at this year’s convention were a) Green Meetings – this topic continues to be on the rise – many groups are asking early on in the planning stages what our city and facilities are doing to promote “Green Meetings”. I would love to hear from those of you that already have a program in place – and those of you that are planning something – please let us know. This has become very important to our convention planners.
VolunTourism – this also has become very popular with convention groups. An example of how this works is this – a meeting planner is bringing a convention to Saratoga. On the first day of the convention (or the last) the groups has a 2-3 hour window of free time. The planner arranges something like a “beach cleanup”, “park cleanup”, “helping out at a shelter”, “blood drive” – just to name a few examples. These volunteer efforts all need to be coordinated in advance and with proper permission, permits, etc. We are reaching out to some local organizations to see if there are opportunities to present to our incoming convention groups in the future. The National Museum of Dance currently houses the Alfred Z. Solomon Children’s Wing, which opened in 2010 and was made possible by a grant from the Alfred Z. Solomon Charitable Trust. This year, the Museum is delighted to announce that they have received a $10,000 grant from the Trust to improve and expand the existing Children’s Wing.
The grant money will go towards a 225 square foot physical expansion to include a previously installed room with wood floor and floor-to-ceiling mirrors, which will allow for more interactive toys & games, and educational children’s programming. Children (and adults) of all ages are encouraged to play, dance, and imagine in the space when the Museum reopens in March!

Home Made Theater continues their 27th season with Agatha Christie’s AND THEN THERE WERE NONE at the Spa Little Theater in the Saratoga Spa State Park. The show runs weekends February 10th through February 26th. Read full press release here!

Nacre chosen for "Top Moments in the Arts for 2011
Nacre Dance Company, resident dance company at The Universal Preservation Hall in Saratoga Springs was chosen by Dance Critic, Tresca Weinstein, in a review for top moments in the arts for 2011.
Earning this recognition was the performance of American Modern Dance legend's Doris Humphrey's 1938 "Passacaglia and Fugue" which was showcased in April 2011 in front of the stately backdrop at The Universal Preservation Hall.
